Executive Sous Chef - Chinese

About the role

Shugulika Africa Limited is hiring a full-time Executive Sous Chef specializing in Chinese cuisine in Dar es Salaam. The role acts as the culinary leader of the unit, driving menus and products from preparation through to portioning, and works closely with management to improve the performance of the unit.

Key responsibilities

• Oversee the complete process from food preparation to portioning, ensuring menu and product specifications are understood and menu employee training is completed.
• Maintain a safe, secure and healthy work environment by enforcing standards, procedures, sanitation and local legal regulations, and ensuring HACCP compliance.
• Ensure meal cycles are communicated accurately and on time, and monitor product yields to maximize usage.
• Prepare recipes in the EGS system, set KPIs for the team and conduct regular assessments.
• Prepare daily shift briefings and work with management to improve unit performance.
• Meet customers to discuss and plan custom-made culinary solutions, and systematically monitor and co-plan ingredient stocks.
• Order supplies, ingredients and equipment when needed, and ensure staff can meet the cooking and food preparation needs of all airline accounts served.

Required profile

• 5 years of experience in a fine-dining hot kitchen and pastry.
• Apprenticeship or culinary school certification preferred; a diploma or degree in professional cookery is preferred.
• Experience with Chinese cuisine, Chinese ingredients and cooking techniques; Mandarin is not required but would be an advantage.
• Fluent English, written and spoken.

• Knowledge of food safety and hygiene regulations such as HACCP.
• Production planning, staff planning and order optimization.
• MS Office and culinary software.
• Understanding of large-scale production and assembly, budget awareness and KPI focus.
• Strong communication, organizational, analytical and leadership skills, and excellent time management.
