Director of Food & Beverage

About the role

Kendwa Rocks Beach Hotel is looking for an experienced Director of Food & Beverage to lead one of its largest and most dynamic departments. You will be responsible for the strategic direction, financial performance, and daily operations of all food and beverage outlets, including restaurants, bars, beach service, room service, events, and the internationally recognised Full Moon Party.

Key responsibilities

• Lead, recruit, train and develop the entire Food & Beverage team.
• Oversee daily operations across restaurants, bars, beach service, room service and events.
• Maintain exceptional food, beverage and service standards.
• Manage bar operations, cocktail development, wine programme and beverage profitability.
• Direct F&B operations for weddings, conferences, corporate events, Rocks Club and Full Moon Party.
• Collaborate with the Executive Chef on seasonal menus and menu engineering.
• Prepare and manage budgets, forecasts, cost control and departmental profitability.
• Oversee procurement, supplier relationships and inventory control.
• Ensure guest satisfaction and resolve major guest concerns.
• Implement staff training, leadership development and performance management.
• Maintain compliance with food safety, hygiene and occupational health regulations.
• Coordinate with Front Office, Finance, Housekeeping, Maintenance, HR, Security, Reservations and Events.

Required profile

• Minimum 5 years’ experience in a senior Food & Beverage management role within a reputable hotel, resort or high‑volume operation.
• Commercially driven hospitality professional with a proven track record of profitability and guest experience excellence.
• Strong leadership and team‑development capabilities.
