Sous Chef – Safari Lodge Kitchen

About the role

We are seeking a motivated and experienced Sous Chef to support the Head Chef in delivering high‑quality meals at Mawe Lodges, located in Serengeti National Park. The role involves overseeing daily kitchen operations, maintaining food safety standards, and ensuring a memorable dining experience for guests in a remote safari environment.

Key responsibilities

• Assist the Head Chef in managing kitchen workflow and daily operations.
• Prepare and present meals that meet company standards for taste, presentation, and consistency.
• Supervise and guide kitchen staff during food preparation and service.
• Maintain strict hygiene, cleanliness, and food safety practices.
• Monitor stock levels, minimise waste, and ensure proper storage of food items.
• Coordinate kitchen activities with the restaurant and service teams.
• Train and mentor junior kitchen personnel.
• Support stock‑taking and control of kitchen supplies.
• Adhere to company policies, food safety regulations, and camp standards.

Required profile

• Certificate or Diploma in Food Production, Hotel Management, or a related field.
• Minimum 3 years experience as a Chef de Partie, Sous Chef, or equivalent, preferably in a lodge, hotel, or safari camp.
• Experience in a remote safari camp environment is an advantage.
• Strong leadership, team‑management, and communication abilities.
• Ability to work under pressure, meet deadlines, and live on‑site in a remote setting.

Required skills

• Knowledge of international cuisine.
• Knowledge of local Tanzanian cuisine.
• Strong understanding of food hygiene and safety standards.
