Sous Chef – Luxury Beach Resort

About the role

Le Mersenne Zanzibar, Autograph Collection is seeking a full‑time Sous Chef to support the Executive Chef in delivering high‑quality cuisine for its resort restaurant and bar in Paje, Zanzibar. The role is on‑site and involves overseeing kitchen operations, maintaining standards, and contributing to menu development for a luxury hospitality brand.

Key responsibilities

• Assist the Executive Chef in planning, preparing, and presenting dishes for the restaurant and bar.
• Supervise kitchen staff and manage cooking stations to ensure consistent quality and portion control.
• Maintain hygiene, safety, and food‑handling standards throughout the kitchen.
• Monitor inventory, control costs, and manage stock levels.
• Contribute to menu development, special events, and seasonal offerings.
• Collaborate with culinary and service teams to deliver a premium guest dining experience.

Required profile

• Proven experience as a Sous Chef or senior line cook in upscale hotels, resorts, or fine‑dining restaurants.
• Formal culinary training or certification from a recognized institute.
• Strong knowledge of international and local cuisine, menu planning, and cost control.
• Ability to lead, train, and motivate a diverse kitchen team while fostering an inclusive environment.
• Commitment to food safety, hygiene, and regulatory compliance.
• Effective communication and organizational skills; able to work under pressure.
• Flexibility to work varied shifts, including weekends and holidays.
• Proficiency in English; additional language skills are a plus.
