About the role
The Senior Sous Chef will support the Executive Chef in delivering exceptional food experiences for guests at &Beyond’s lodge. This senior kitchen leader ensures high standards of quality, safety, and service while managing daily operations and staff.
Key responsibilities
- Maintain professional standards and inspire the kitchen team.
- Assist the Executive Chef with menu development, food quality, and budget monitoring.
- Lead daily briefings with heads of departments and conduct department hand‑over meetings.
- Ensure compliance with health, safety, HACCP and Covid‑19 protocols.
- Oversee uniform compliance, stock takes, and cleaning rosters in line with Tanzanian regulations.
- Manage staff rosters, sick leave records, and budget‑controlled ordering.
- Facilitate effective communication between kitchen, lodge managers, guest relations and butlers.
Required profile
- Formal culinary qualification.
- Minimum 2 years experience as a Sous Chef, preferably in a 5‑star operation.
- Ability to work under pressure with strong attention to detail.
- Guest‑focused attitude, positive outlook and a willingness to learn.
Required skills
- HACCP and food safety compliance.
- Budget management and cost control.
- Stock control and inventory management.
- Menu planning and development.
