Executive Chef – Resort

About the role

Reef & Beach Resort is looking for an experienced Executive Chef to lead the culinary operations of its beachfront resort in Zanzibar. The successful candidate will be responsible for delivering high‑quality dining experiences while managing a diverse kitchen team.

Key responsibilities

• Oversee all kitchen operations across restaurants, bars, banqueting, and specialty outlets.
• Lead, inspire, and manage the entire kitchen brigade, including Sous Chefs and section chefs.
• Maintain the highest standards of food quality, presentation, hygiene, and safety.
• Design and develop innovative menus that reflect local and international cuisine.
• Collaborate with the Food & Beverage team to align menus with the resort concept and revenue targets.
• Monitor food costs, portion control, wastage, and kitchen budgets to maximise profitability.
• Ensure efficient purchasing and stock management in line with quality and cost objectives.
• Drive continuous improvement in kitchen procedures, team training, and operational standards.
• Ensure full compliance with HACCP, hygiene, and food safety regulations.

Required profile

• Proven experience as an Executive Chef in hospitality or resort operations.
• Strong leadership and team‑management abilities.
• Excellent knowledge of international cuisine, menu development, and kitchen operations.
• Strong financial and cost‑control awareness.
• Experience in remote or international destinations is an advantage.
