About the role

The Senior Sous Chef will support the Executive Chef in delivering exceptional culinary experiences at &Beyond’s lodge. This senior kitchen leader ensures high standards of food quality, safety, and service while managing day‑to‑day operations.

Key responsibilities

• Maintain professional standards and inspire the kitchen team.
• Assist the Executive Chef with menu development, food scoring, and budget monitoring.
• Lead daily briefings with heads of departments to coordinate arrivals, special requests, and guest delights.
• Oversee health and safety compliance, including HACCP and Covid‑19 protocols.
• Manage uniform compliance, staff scheduling, sick‑leave records, and month‑end stock takes.
• Ensure smooth operation of the kitchen and canteen, including cleaning rosters that meet Tanzanian regulations.

Required profile

• Formal culinary qualification with at least 2 years of Sous Chef experience in a 5‑star environment.
• Ability to work under pressure with strong attention to detail.
• Guest‑focused mindset, positive outlook, and a commitment to continuous learning.

Required skills

• HACCP and food safety protocol knowledge.
• Budget and cost‑per‑head management.
• Computer proficiency for record‑keeping and reporting.
